muraty-dogany is not a restaurant, a brand, or a business venture. It is a personal archive — a living record of flavors that span centuries of Anatolian and Ottoman culinary tradition, gathered from village kitchens, ageing handwritten notebooks, and the fading memories of grandmothers who cooked without measuring anything.
Murat grew up watching his anneannem — his grandmother — prepare dishes that have no written recipe, no YouTube tutorial, and no equivalent on any restaurant menu. That knowledge, passed hand to hand for generations, is quietly disappearing. muraty-dogany exists to slow that disappearance.
Here you will find recipes reconstructed with care and cooked with patience: slow-braised lamb from Konya, spiced pilafs from the old Ottoman palace repertoire, forgotten Aegean meze, and winter soups from the Black Sea highlands. Every dish carries a story worth knowing.
